We source part of our beef directly from Hof Thieße, a family-run farm with mother cow husbandry and its own butchery in the Hanover region. In a district of Neustadt am Rübenberge, Limousin cattle are raised on the lush meadows along the Leine River. During winter, they’re fed high-quality silage and hay grown right on the farm.

Thanks to Hof Thieße’s passion and commitment to sustainable mother cow husbandry, we offer premium beef that is fully utilized. This allows us to serve not only tender steaks but also delicious regional specialties – turning every bite into a unique experience.

Butchery Grammen Ahlberg

We work closely with the regional butchery Grammen Ahlberg, a company that has upheld traditional craftsmanship for over 100 years. The animals come from trusted local farmers, forming the foundation for the high quality of our dishes. Now in its third generation, the butchery continues to produce fresh sausages daily using time-tested recipes and master-level expertise.

We rely on the high-quality, sustainable ice cream creations from Birne & Beere, lovingly crafted at Julian’s Eismanufaktur. We especially value their regional focus, as the fruits and many other ingredients come from local producers, giving the ice cream its unique quality and flavor. The fresh whole milk and cream are sourced from the organic dairy farm Dehlwes. We proudly support Birne & Beere’s sustainable approach – they even deliver their ice cream by bicycle. No unwanted additives or artificial emulsifiers are used, ensuring the natural integrity of the product.

Hendrik Heimberg and his family have been running their farm in Luthe near Wunstorf for nine generations, focusing on free-range farming that meets the highest standards of animal welfare. The chickens are raised in the Leine region and sold directly within the area, allowing us to offer you fresh, regional products. The passion and expertise poured into raising the Leinehähnchen are reflected in the quality and flavor our guests enjoy with every bite.
